About Chef Giancarla Bodoni
Giancarla Bodoni is the Culinary Director at Monteverdi Tuscany. She also sits at the helm of the her Culinary Academy where her private cooking classes and Chef’s Table dining experiences feature Tuscan cuisine tailor-made to accommodate the tastes of visitors and guests. For more than 25 years, Chef Giancarla has been a pioneer in the organic, slow-food movement. Giancarla comes to Monteverdi after more than two decades running her successful Miami-based restaurant, Escopazzo, the first certified organic Italian restaurant in the U.S. Giancarla is never one to rest on her laurels. Fueled by a mission to be a good steward of the earth and motivated by a genuine concern for the health and well-being of each guest, Giancarla has planned an ambitious agenda for the 2025-2026 season, including her Chef in Residence program at Monteverdi’s Culinary Academy. Her goal is to create truly memorable culinary experiences in one of the most special food destinations in the world.
About Chef Nancy Silverton
Nancy Silverton is the co-owner of the Mozza Restaurant Group which consists of four locations in California: Michelin-starred Osteria Mozza, Pizzeria Mozza, Mozza2Go, and chi SPACCA in Los Angeles, Osteria Mozza DC in Georgetown and Osteria Mozza Lanai in Hawaii. Her international restaurant locations include Los Cabos, London, and Singapore.
In 2014, she received the highest honor given by the James Beard Foundation for “Outstanding Chef.” That same year, she was also listed as one of the Most Innovative Women in Food & Drink by both Fortune and Food and Wine magazines. In 2017, Nancy was profiled in an episode of Netflix’s award-winning docuseries Chef’s Table. Nancy has authored eleven cookbooks; her most recent, entitled The Cookie That Changed My Life, was included in the New York Time’s Bestseller List.
