Description

Join us for a workshop on fermentation- capturing and preserving the vegetables of this winter season. This is the perfect time to explore root vegetables that are high in natural sugars, are moderate in starch content and lend themselves well to this process.

We will explore:

  • Lacto-fermentation
  • Salts
  • Yeasts
  • Aceto Bacti
  • Koji
  • And more

To make a variety of fermented vegetables, juices, vinegars, kombucha and miso as we turn over-run or by-product into viable ingredients.

You will also learn about equipment needs, sanitation and safety, and the steps needed to set up legitimate processing production in your own space.

Coffee and beverages are available throughout the day, and lunch will be served.

Attendees will be standing, cooking and working throughout the class. Please wear a chef coat, comfortable, closed-toe shoes, long pants and have long hair tied back. You may wish to bring your own knives, a laptop or note-taking supplies.
